Today we will be making easy recipe Okoy or Ukoy (Vegetable Fritters), crispy fritters paired with sweet chili sauce or a spicy vinegar dipping sauce. They’re delicious and easy to make with so many options. If you like to add shrimp you can do so!! The possibilities are endless hahaha! Tara nood na!

INGREDIENTS:
For the fritters:
โข 2 potatoes
โข squash
โข carrot
โข onion sliced thinly
โข cilantro (stems and leaves) chopped
โข salt to taste (I used 1 teaspoon kosher salt; use less for table salt)
โข pepper to taste
โข 1 egg
โข 1 cup flour : cornstarch
โข baking powder/soda
โข shrimp (optional if you like to add)
โข cup water
โข canola or other vegetable oil for frying
